Favorite Recipes from Around the World: 4-Part Thanksgiving Series

We’re sharing recipes straight from the kitchens of the men and women TechnoServe works with around the world.

Comitan, Mexico

Part 1 of 4

As the holiday season approaches in many parts of the world, families and friends will gather together over special meals of home-cooked food. As all of us share a love of food and family, no matter where we’re from, we’d like to share some recipes straight from the kitchens of the men and women TechnoServe works with around the world.

Today we launch our series with a recipe created by Josefina Leyva from Comitán, the fourth-largest city in Chiapas, a state of Mexico

Josefina worked with TechnoServe and Walmart Foundation of Mexico through the Inclusive Agriculture program, an initiative to support smallholder farmers in Mexico to improve the yields and quality of their crops, connect them to better markets, and improve their incomes.

Since 2011, the Walmart Foundation of Mexico and TechnoServe have worked with more than 26,000 smallholder farmers to create a more inclusive, resilient, and sustainable model for Mexico’s agricultural sector.

The Inclusive Agriculture program increases smallholder incomes by training farmers in productive and administrative skills, promoting regenerative agricultural practices, and collaborating with companies in the agri-food sector seeking to transform their supply chains.
